Fall Recipes: Chicken

Since September is National Chicken Month I thought that it was only appropriate to have a Chicken recipe. Can I just say that this recipe is super easy and healthy?! Not only is this recipe quick to make, you could also pair it with any dipping sauce that you could think of.

Ingredients:

12 ounces skinless, boneless chicken-breast halves 
1 egg, slightly beaten
1 tablespoon honey
1 teaspoon prepared mustard
2 cups, cornflakes, finely
Dash of black pepper

Directions:

1. Preheat the oven to 450 F
2. Cut chicken into 3 by 3/4 inch strips
3. In a dish, combine egg, honey and mustard
4. In another dish, stir together cornflake crumbs and pepper
5. Dip chicken strips into the egg mixture and proceed to roll into crumb mixture to coat.
6. Arrange chicken strips on an ungreased baking sheet
7. Bake for about 12 minutes, until the outsides are golden and the chicken is no longer pink.

This recipe makes 4 servings

Fun Facts:

- According to Marisa Moore, an spokesperson for the American Dietetic Association, the honey and mustard help enhance the flavor of the chicken without adding fat.

- She also says that using cornflakes instead of bread crumbs help create that same golden brown exterior without using oil.
